Table styling

I have a default options defined like this.

Here I define my column. The definition I don't like.

If I have a column and if I want to change it's placeholder then it will override default sx in a shallow way overriding fontSize 13px (was specified above). Right?

so I have to specify sx

                maxWidth: "110px",
                minWidth: "68px",
                width: "100%",
                "& input": {
                    textIndent: "2px",
                    fontSize: "13px",
                },
            },

Can I deal with this in some smart way? I don't want to specify 13px for the input font in the header every time.
But many other things too
